It was the year 1972 when Cantine Paolini announced its first harvest. From small parcels, as well as single rows, juicy grapes of typical Sicilian varieties are still carefully curated to give life to the 72 Filara line. Grape variety: Nero d'Avola (60%), Frappato (40%). The wine ages for 12 months in tonneaux and barriques, then passes into vitrified cement vats. The assembly takes place after the aging in cask. It ages for other 10-12 months in the bottle to evolve the bouquet. Ruby red color, with a complex, intense, spicy perfume and a fruity touch of wild strawberries, cherry, plum, mixed with light hints of red rose. On the palate rich, wide and velvety, with a great structure and aromatic persistence with an acidic aftertaste, soft and balanced tannins that gives a fresh acidity. Pairings: particularly suitable to accompany first courses, white meats, grilled game. Vegetable couscous, risotto, meat rolls, country omelettes, duck stews.
